Method
Step 1: Slice
Cut chicken into strips. Slice peppers and onions into similar-sized strips.
Step 2: Season
Toss everything with oil and fajita seasoning on tray.
Step 3: Roast
200°C for 25 minutes. Chicken should be 74°C internal.
Step 4: Warm Tortillas
Wrap in foil, add to oven for last 5 minutes.
Step 5: Serve
Squeeze lime over everything. Serve with yogurt and cheese.
Tips
Don't overcrowd: Use two trays if needed — crowding steams instead of roasts.
DIY seasoning: 1 tsp each cumin, paprika, chilli powder, garlic powder + salt
